Onion and Garlic Syrup

Most of us keep onions and sugar or honey in the cupboard and now is the time that the onion harvest starts to come in from the veg patch. If any of those winter bugs develops into a cough, onion and garlic syrup is a winner to help fix it and its so easy to make.

You need:

• A jar
• A couple of organic onions (red or white will do red are milder, preferably) 
• 5 garlic cloves and/or a little ginger (optional)
• Sugar or honey (I use molasses sugar or local honey)

1. Start by slicing up the onions quite thinly and the garlic and ginger if you fancy.
2. Create a layer of onion in the bottom of the jar about 3 centimetres thick.
3. Pour honey over the top or cover in sugar, a good cm or more.
4. Continue this layering process until you reach the top of the jar.
5. Finish with a layer of honey or sugar and cover with the lid or a bit of a carrier bag tied on with an elastic band.
6. Leave over night preferably in the fridge
7. It will turn into a dark runny, sticky liquid
8. You can use it straight from the jar or squeeze it through a muslin.
9. Keep it in the fridge once its ready.

I have used the delicious brown, soft molasses sugar, its unrefined, and tastes delicious as well as making a lovely gooey syrup. I use it when the family has nasty coughs it seems to really help get the gunk off your chest and speed up the infection working its way out….brilliant and delicious. You can use your syrup 2 or 3 teaspoons, 3 times daily or just one teaspoon for smaller children… Kids love making this one and generally love the taste of the syrup too. It’s super simple. It does last forever so keep it in the fridge and make fresh for each bought over the winter months.
