Chris Woollams, creator of The Rainbow Diet, has collaborated with leading nutritionist, Barbara Cox, to create a new recipe book promoting long-term health that hits shelves this December.
An inspirational new recipe book is expected to improve people’s health by encouraging them to consume meals high in disease-fighting, immune-boosting, pigment-rich ingredients. Rainbow Recipes is the follow-up to Oxford University Biochemistry graduate Chris Woollams’ highly successful Rainbow Diet. For the new book, Chris has approached leading nutritionist, Barbara Cox, to create Rainbow Recipes.
Barbara Cox is one of the country’s most respected nutritionists and rose to acclaim as the founder of Nutrichef – an innovative healthy meal delivery company which, under Barbara’s wing, grew from a local enterprise to a national operation delivering nutritional food to over a hundred clients a day throughout the UK. A leading authority on nutrition in the UK and Europe, Barbara has also been appointed team nutritionist and adviser for a number of leading athletes including Emilio Sanchez, Spanish Captain for the 2008 Davis Cup, and 40 UK Paralympic athletes for the 2008 Paralympics. Barbara has also been awarded the national title of ‘Entrepreneur of the Year’ by the British Chambers of Commerce. Earlier this year, Barbara sold Nutrichef to focus on her consultancy, BC Nutrition, and create Rainbow Recipes.
The original Rainbow Diet, was built on scientific evidence of the benefits of certain foods consumed by people living in countries around the Mediterranean. Author Chris Woollams began his research into healthy diets in 2004 when his daughter Catherine was diagnosed with a brain tumour, and now runs the charity CANCERactive. Chris and Barbara’s new title, Rainbow Recipes,continues on from the work published in The Rainbow Diet to highlight the importance of consuming meals high in disease-fighting, immune-boosting, pigment-rich ingredients. Barbara wrote over 70 recipes for the book which details how to make delicious, nutritious meals and snacks that can help in the promotion of long-term health.

For example, its role in maintaining a healthy heart, blood vessels, muscles, nerves and bones. As for the significance of colour, the pigments that give fruit and vegetables their characteristic shade are antioxidants – incredibly important biochemicals that neutralise disease-causing ‘free radicals’ inside us every day.”
